Super creamy cauliflower soup (totally plant-based!)

Who says soup is for the colder seasons? I say the soup season lasts all year round! This recipe is super easy, comforting and creamy.

If you've never had cauliflower soup, you don't really know what you are missing, definitely. It is easy to prepare, creamy and almost elegant. On top of that, cauliflower is packed with fiber and water, making it great for your gut health. It is also high in B vitamins, antioxidants and phytonutrients that can protect against several conditions.

 This recipe is super easy, comforting and creamy.
  1. Warm the olive oil in a saucepan and sautee the onions and garlic for a couple of minutes.
  2. Add the cauliflower and at this point you can add some salt and pepper 
  3. Pour in the stock and cook for about 15 minutes or until you notice the cauliflower is soft.
  4. Remove from the heat and add the sour cream to the mixture, use a hand mixer to blend and add a bit of salt and pepper, if you need to.
  5. Serve and top with your veggies of choice, brocolli, green onions or crutons!
