Pancakes are easy to prepare, super tasty and fluffy, but you can definitely level up your recipe to increase their nutritional value. 

Pancakes are great for breakfast, and lunch and basically I could eat it every day without getting tired, but what if you could add some ingredients to include more nutrients? Level up your breakfast with these antioxidant-packed pancakes!

Lemons are high in fiber and vitamin C, making them great to support immune health and poppy seeds are great at supporting digestion, and boosting your hair and skin, and they contain fiber, calcium, magnesium, zinc, and protein, nothing bad, right?

 Pancakes are easy to prepare, super tasty and fluffy, but you can definitely level up your recipe to increase their nutritional value. 
  1. Heat a large frying pan on medium-low heat.
  2. In a bowl mix the eggs, yogurt, lemon juice, zest, honey, and vanilla. Whisk it until well blended.
  3. Add all the remaining ingredients and make sure to mix until you get a well-blended batter.
  4. Coat the skillet or pan with a bit of coconut oil or butter and pour ¼ of the mixture onto the pan Let it cook for 2 minutes and flip, continue until you don't have any batter left.

You can top your pancakes with more yogurt, honey, maple syrup or fruit, just about anything you like.
