There is nothing like fresh pasta, it is rich and tasty, it is fun to make, and when made at home you can do without all the preservatives. This recipe is super easy to prepare, it is totally plant-based, it takes no more than 30 minutes in total to cook – that if you are planning to boil pumpkin, but you can totally use canned pumpkin too and then it will be ready in minutes!

You can totally use canned pumpkin for these vegan pumpkin tagliatelle.
  1. On top of a clean countertop pile the flour and make a hole in the center, add the pumpkin pure in the well – at this point you can add salt and pepper to the puree if you want to.
  2. Start mixing the pure with the flour until it forms a dough. It shouldn't be sticky, so if it's necessary, add more flour to the dough. 
  3. Divide the dough into sections and keep it under a towel to avoid it getting dry. 
  4. Roll put each piece with a rolling pin into a thin sheet and cut it into half-centimeter strips. Repeat it until you've fused up all the dough. 
  5. To cook bring water to a boil and drop the tagliatelle into the water in batches, cook until they float, and top with your sauce of choice!
