Celery and potato cream soup
- 3-4 stalks of celery
- 2 medium-sized potatoes
- 1 small onion
- Dill or coriander to taste
- 100 g of butter (dairy-free or vegan if you like)
- 3 cups of vegetable stalk
- 1/2 cup natural unsweetened yogurt (vegans can use soya)
- Olive oil
- Salt
- Pepper
How to:
- Wash all the vegetables and peel the potatoes.
- Using a food processor or a knife, chop all the vegetables.
- Place all the ingredients in a medium-sized pan, add a spoon of olive oil, and stir-fry for a couple of minutes
- Add the stalk and cook for 10 more minutes.
- Using a high-speed blender, blend all the cooked ingredients, adding in the yogurt, salt, and pepper.
- Top with dill or coriander and serve.
