Try this amazing celery, date, and cheese salad. A show-stopper you can make in minutes!
What you need:
- 8 stalks of celery
- 6 dates, pits removed
- 0.5 cup of almonds
- 3 tbsp lemons juice
- 50 g of parmesan or vegan parmesan
- 1/4 cup extra virgin olive oil
- Salt, pepper, paprika
- Place the almonds into the oven for 10 minutes, then remove, cool and chop into smaller pieces.
- Grate the cheese (or purchase grated).
- Wash and chop celery stalks.
- Mix all the ingredients in a bowl, adding salt, pepper, and paprika to taste.
- Top with a mix of lemon juice and olive oil. Ta-da!
