Homemade ice creams are easy to make and are a perfect snack for hot summer days.

Popsicle ice creams are a delicious way to cool down during the summer, the problem is that they are full of sugars, colorants, additives and the vegan options are very limited. The good news is that you can make them at home, it is very easy and inexpensive and you can use your favorite ingredients.

1. 1. Creamy Watermelon Ice Cream

Creamy Watermelon Ice Cream

This Ice Cream is a refreshing and healthy dessert, perfect for these hot summer days, suitable for vegans, diabetics and celiacs.

Ingredients

  • 1 watermelon
  • 2 cups of coconut milk

Preparation

Cut the watermelon into small pieces, removing both the skin and the seeds. Freeze the watermelon pieces for at least 4-5 hours.

Put the frozen watermelon in a food processor, and pour half the coconut milk into it. Process the mixture, adding the rest of the coconut milk, little by little as necessary, to help the process, and to make a creamier watermelon ice cream.

Serve immediately and enjoy this delicious and refreshing watermelon ice cream.

This ice cream is super healthy and refreshing! The texture is almost as a mousse. Perfect as a creamy snack for diabetics and celiacs.

Ingredients  

  • 2 peeled and frozen bananas
  • 1 cups of frozen strawberries (or any berries you like )

Preparation

Put the ingredients on a blender and voila! Scoop into bowls, serve, and enjoy!

Tip: To make it sweeter use ripe bananas or add 3 tbsp of brown sugar. Or if you like it more creamy, use coconut milk to taste.

Ingredients  

  • 2 ripe avocados
  • 1/2 cup of coconut (or other plant-based milk)
  • 4 tbsp raw cacao powder
  • 1 tsp vanilla extract
  • 3 tbsp of brown sugar

Preparation

Mix all the ingredients into a blender and blend until smooth. Taste, and add sweetener or more cacao if desired.

Freeze for about three hours, mixing well every 30 minutes. After three hours voila!

Ingredients  

  • 3 cups of corn, whole, fresh
  • 3 cups of almond milk (or coconut milk if you like it more creamy)
  • 3 tbsp of brown sugar
  • 1 tsp of Vanilla extract

Preparation

Place the corn, almond milk, and sugar in a large pot and let the milk heat until it is about to boil. Turn off the heat and remove the pot from the stove, let the mixture cool to room temperature.

Blend the mixture very well and you can strain it (or not according to your preference.)

Pour the mixture into the popsicle molds and freeze for 5 hours.

5. 5. Hazelnut Popsicle Ice Cream with Chocolate Topping

Hazelnut Popsicle Ice Cream with Chocolate Topping

If you are more of a fan of chocolatey and creamy flavor you will love this ice cream. It's pure pleasure. (seriously, drooling from just writing it)

Ingredients 

  • 2 bananas
  • 1 cup of almond milk
  • 1 tbsp of maple syrup
  • 4 tbsp of hazelnut cream
  • 3 tbsp of coconut oil
  • 1/3 cup of dark chocolate

Preparation

Blend the bananas, almond milk, maple syrup, and hazelnut cream in a mixer until well combined.

Spread the mixture between the molds and put them in the freezer for 45 minutes. Place the wooden craft sticks in and put them back in the freezer for about 3 hours or until they are completely solidified.

To make the topping, place the oil and the chocolate in a saucepan over low heat until the chocolate melts, mixing until the chocolate is manageable. Remove the mixture from the heat and cover the lollies evenly.
